Friday Favorite: Vegetable Soup

Since the garden is bursting with fresh vegetables, I’ve been making pots of vegetable soup. The soup gets ladled into wide mouth pint mason jars and tucked away in the freezer, ready for quick meals come cold weather. We eat some in the summer too, last night I made a pot of minestrone and we will be enjoying that this weekend. It was filled with: potatoes, cabbage, zucchini, tomatoes, onions, garlic, celery, green beans, and herbs from the garden.

I make soup with whatever vegetables are ready to harvest, curried broccoli, tomato, vegetable, etc. It’s nice to know that there are instant meals ready for fall days when I’d rather spend every drop of sunlight working in the garden. I also love using up all those bits of vegetable peels to make vegetable stock for all these soups. I feel like I’m making the most of the bounty of summer.

    Just a personal note to say thank you. My beets are in the refrigerator now and it was so much less work and mess in my kitchen!

    Hmmm… I have two zoupa tuscana and my mom’s vegetable beef soup.

    Now I want to make soup!

    Susy, twelve quarts of tomatoes canned. This will be saved in the storage room for soup stock later in the year when the weather is cooler outside and a little heat in the kitchen is a welcome addition to the the house. I will mix up a big batch of soup, enjoy some at that time, and can most of it for later use. I really don’t have a favorite soup. All soups are my favorite. I eat soup almost every day. It’s a totally complete nutritional dish without a lot of fuss and mess. A big chunk of bread and a bowl of soup is all I need for a tasty meal whether is cold or hot outside makes no difference to me. However, it does seem to taste better on a chilly fall day.

    The temperatures are already dancing with upper 40s here in Nebraska. It’s a full 15 degrees below normal for this time of the year. Now this week the temperatures will be back in the 90s. Wild temperature swings this summer has really caused some issues with gardening. The plants don’t know whether to go into fall end of season mode or keep producing summer mode. Add to it the extremely wet conditions of excessive moisture and the poor plants don’t know whether to swim or conserve moisture for later. It’s been a totally confusing year for most everything in the garden including the gardener. The wild life is having a hay day with the lush growth and is eating every thing in sight. Now that all the plants are mature, they have finally stopped visiting the garden.

    I make all kinds of soup, but roasted tomato soup gets the most real estate in our freezer. It’s perfect on a winter day.

    Probably your lentil stew is my favorite! I also have a creamy winter grains soup that I like a lot, and an African peanut sweet potato one that is really good.
